🏴 From Aberwen
Welsh Cakes
Makes about 16 · 30 minutes
Somebody in Aberwen keeps leaving these on doorsteps, still warm, with no note.
You'll need
- 225g / 1¾ cups self-raising flour
- ¼ tsp mixed spice (or a pinch each of cinnamon and nutmeg)
- Pinch of salt
- 100g / 7 tbsp cold butter, cubed (traditionally half butter, half lard)
- 75g / ⅓ cup caster (superfine) sugar, plus extra for dusting
- 50g / ⅓ cup currants
- 1 egg, beaten
- 1–2 tbsp milk, if needed
Method
- Mix the flour, spice and salt in a bowl. Rub in the butter with your fingertips until it looks like breadcrumbs.
- Stir in the sugar and currants, then the egg. Bring it together into a soft dough, adding a splash of milk only if it is dry.
- Roll out on a floured surface to about 5mm (¼ inch) thick. Cut into 6–7cm (2½ inch) rounds.
- Heat a bakestone, griddle or heavy frying pan over medium-low heat and grease it lightly with butter.
- Cook the cakes 2–3 minutes per side until golden brown and cooked through. Keep the heat gentle so the middles cook before the outsides darken.
- Toss in caster sugar while still warm. Best eaten the same day, ideally off a doorstep.

- 375g / 2¼ cups mixed dried fruit (raisins, sultanas, currants)
- 250ml / 1 cup hot strong black tea
- 100g / ½ cup light brown sugar
- 1 egg, beaten
- 250g / 2 cups self-raising flour
- 1 tsp mixed spice
- Butter, for serving
Method
- Put the fruit and sugar in a bowl, pour over the hot tea, stir, cover and leave overnight.
- Heat the oven to 160°C / 150°C fan / 325°F. Grease and line a 2lb (9×5 inch) loaf tin.
- Stir the egg into the soaked fruit, then fold in the flour and spice until no dry flour remains.
- Spoon into the tin and bake for 1 hour to 1 hour 15 minutes, until a skewer comes out clean. Cover with foil if it browns too fast.
- Cool in the tin for 10 minutes, then on a rack. It slices best the next day. Serve thick, with plenty of butter.
